Ingredients
  1. 3 T. oil
  2. 3 bags of Spinach (9 0z.) each
  3. 1 can tomato sauce
  4. 1/2 c. white or brown rice
  5. 1 medium onion (diced)
Instructions
  1. Heat oil in dutch oven.
  2. Sautee onion until translucent.
  3. Add rice.
  4. Sautee with onion for 1-2 minutes.
  5. Rinse spinach.
  6. Add spinach to the pot.
  7. Let it wilt down.
  8. Add tomato sauce.
  9. Season with salt and pepper.
  10. Cover for 15 minutes or until rice is done.
Notes
  1. Great dish for a vegetarian or a side dish. You can add more rice if you want to make it a heartier dish.
