Ingredients
  1. 2 cups vegetable oil
  2. 2 2/3 cups granulated sugar
  3. 5 large eggs
  4. 2 2/3 cups grated peeled carrots (approx. 5 carrots)
  5. 1 1/3 cups pineapple (drained and crushed)
  6. 2/3 cups coconut flakes, sweetened
  7. 1/3 cups raisins
  8. 3 1/2 cups all-purpose flour
  9. 1 1/3 tablespoon baking soda
  10. 1 1/3 tablespoon baking powder
  11. 1 teaspoon salt
  12. 2 2/3 tablespoons ground cinnamon
  13. 1/3 cups Walnuts
FROSTING
  1. 8 oz. Cream Cheese
  2. 1 Stick of Butter (softened)
  3. 1 1/2 C. powdered sugar
  4. 1 tsp. Vanilla
Instructions
  1. Heat the oven to 350º F.
  2. Grease and flour the bottom and sides of two 10-inch cake pans.
  3. Set Aside.
  4. In a medium size bowl, whisk flour, salt, cinnamon, baking powder and baking soda until blended well.
  5. Mix together in a large bowl, the oil, sugar, eggs, carrots, nuts, pineapple, coconut and raisins.
  6. Add the carrot mixture, and mix well.
  7. Add the mixture in to the 2 pans evenly.
  8. Cook for 35- 40 minutes or until done.
  9. Remove from oven and cool for 30 minutes.
  10. Release cakes from the pans and cool completely before frosting.
FROSTING
  1. Beat the cream cheese and butter together until smooth.
  2. On low speed add powdered sugar.
  3. Add vanilla.
  4. Cream until smooth.
  5. Garnish with toasted walnuts and coconut.
Notes
  1. All the rage is the 'naked' cakes. This would be a great cake to do that with. Put the frosting between each layer and on top and leave the sides frosting free. I went with the rosettes because it was a birthday.
